This is a 13 year old Single Grain, distilled in Cooley Distillery. It’s limited to 314 bottles and bottled at 46% ABV. With a slight pink tint, it is fruity, fresh, quite unsual and very moreish. Non chill-filtered whiskey with no added colour.
Maturation:
This whiskey was first matured in a Bourbon cask for 9 years and 2 months, then Somontano wine cask for 15 ½ months before being moved back to first fill Bourbon cask for the remainder of its 13 year maturation. The Somontano cask is from a small family-run producer called el Grillo y la Luna in Barbastro, in the foothills of the Pyrenees in Northern Spain.
Inny Bay:
Inny Bay is on the Longford/Westmeath border on the eastern shores of Lough Ree, in the heart of Goldsmith Country, close to Tang and Maghera. It’s where the The River Inny, a magnificent pike fishery, finishes its journey all the way from near Oldcastle in Co Meath, as it flows into Lough Ree.
Tasting Notes:
Nose:
Opening with some vanilla and leaf tobacco, moving into intense strawberry and cherry aromas.
Taste:
Juicy, fruity minerality, with lots of fresh strawberries, a hint of chocolate, and some fresh mint.
Finish:
Dry, quite spicy with more red fruit and cracked black pepper.
